Loaded with vegetables and mushrooms, this authentic udon stir fry, or Yaki Udon is a classic street food staple at festivals across Japan. In this week’s video, I’m going to show you how to bring the matsuri experience home by making this easy noodle dish at home. I’ve made this one plant-based, but if you want to add meat or seafood, you can stir-fry some pork, chicken, or shrimp before adding the vegetables.

INGREDIENTS:
600 grams pre-cooked frozen udon (such as ramen)
1 tablespoon vegetable oil
60 grams shiitake mushrooms (3 mushrooms, sliced)
100 grams onion (~1/2 small onion, sliced)
100 grams cabbage (~2 leaves, chopped)
60 grams carrot (~1/2 carrot, julienned)
1 tablespoon Worcestershire sauce (plant-based)
2 tablespoon soy sauce
1 tablespoon maple syrup
1/4 teaspoon black pepper
2 Scallions (chopped, for garnish)
Benishoga (for garnish, make sure there’s no cochineal)
