Turkish KOFTE & PIDE Kebab: Perfect Iftar Meal for Ramadan. On our first iftar I bring two all time favorites to one dish: Ramadan pide and Turkish kofte! We call this “Köfteli Pide“ meaning köfte with pide base. It is similar to iskender and perfect to use any leftover breads or pides. But I’ll be using fresh pide that will make as well.

Ingredients for Kofte Mix:
1 medium size onion
500gr. beef or mix of beef and lamb
1 tsp each black pepper, paprika, cumin
1 1/2 tsp salt
1/2 tsp baking soda
3/4 cup bread crumbs
about 1/3 cup cold water
For the Ramadan and small pide dough:
First mix:
1/2 cup lukewarm water
20gr. fresh yeast or 1 tbsp dry active yeast
1 tbsp sugar after 5 minutes
