The most popular and authentic Street Food in Turkey is Kokorec - Grilled Lamb Intestines. There is the Original Izmir Kokorec, served fried in Bread. Or the Istanbul Kokorec, which also includes Peppers and Tomatoes. Kokorec is cooked on a horizontal skewer in a Special Grill Oven. It is then chopped up in portions and seared on a hot griddle. [2] The Kokorec comes from Usta Kokoreç in BelgiumThe Kokorec production is extremely time-consuming and requires the highest hygiene measures about cleaning the intestines, which would be associated with high costs if you were to make these in a shop and produce it yourself.
