ROTI
In South Africa, roti is something we regularly eat, together with curry. It’s a round, soft flatbread, made with just flour, butter and water. It is incredibly easy to make, and a firm crowd pleaser. One is never enough!
You will need:
2 cups of flour
4TBS of butter, melted
1 cup of boiling water
Salt
Sift the flower into a bowl. Add the melted butter and a pinch of salt and mix with a knife, until the mixture resembles breadcrumbs.
Now carefully add a cup of boiling water into the flour, and continue to mix, until the dough comes together and is cool enough to handle. It will still be quite wet and lumpy at this stage.
Now you can start kneading the dough. The dough will feel sticky but keep going, it will soon become soft and smooth.
If the dough doesn’t feel soft, you can drizzle in a little more butter and continue kneading. But be careful not to over knead the dough.
Divide the dough into 8 pieces. Roll each piece into a round ball.
