Spend a cozy day in October with me - preparing for autumn, exploring Harry Potter locations in Oxford, searching for mushrooms and making a pumpkin soup.
October is off to a lovely start and I’ve been loving these slow, lovely quiet days. Something changed in the air and I can’t quite put my finger on it. I feel like this month will be a wonderful one. And I’m wishing you the same!

PUMPKIN SOUP RECIPE:
1 medium butternut squash (or any pumpkin)
2 zucchini
2 carrots
1 large onion
1 head of garlic
1 thumb sized piece of ginger
Salt and pepper to taste
Olive oil
1 litre of water or stock
1 tsp of paprika
1 tsp of ground cumin
1 tsp of turmeric
1/2 tsp of oregano
1/4 tsp chili flakes
1/2 lemon zest
4 tbsp oat cream or dairy cream
Optional:
Parmesan cheese
Pan fried mushrooms
Coriander
Cut butternut squash in half (or quarters) and remove seeds. Remove ends from zucchini and carrots and roughly chop. Peel and onion and cut into quarters. Slice a whole garlic head into half. Place everything on a tray, sprinkle with salt, pepper and olive oil and then roast for 40-45 minutes at 180C/ 356F.
Keep an eye on veggies - you might want to remove everything apart from butternut squash a bit earlier to avoid burning. But I found that everything cooked evenly in my oven.
Let the veggies cool down. Then scoop out butternut squash flesh and place everything into a large sauce pan or a deep cast iron pan (with lid). Roughly slice ginger and add to the pan. Add spices and water/ stock. Bring to a boil and cook for 10-15 minutes under a lid. Add lemon juice and zest. Blend well with an immersion blender then pour cream & mix. Place back onto a hob and bring to a slow simmer (under a lid, or it will splatter everywhere). Try it and adjust salt and pepper to your taste.
Optionally you can also fry some mushrooms with salt and pepper in a separate pan and add to the soup, as well as some chopped coriander. When serving, sprinkle with parmesan cheese.
