I really like this new score - the ā€˜featherā€™ lifted beautifully on both sides, adding depth to the score and making it stand out even more. Hereā€™s my recipe for this sourdough bread Makes 2 loaves 140g wholegrain levain 490g white bread flour 210g wholegrain flour 540g water 15g salt 20g water 1. Autolyse flour and water for 2hrs 2. Add levain, rest 30min 3. Add salt and 20g water, rest 30min 4. Stretch & Fold, rest 30min 5. 4x Coil folds, rest 30min in between 6. Rest to finish bulk (reach about 70% increase) 7. Pre-shape, bench rest 30min 8. Shape and place in the fridge overnight 9. Next morning - score and bake (25min at 250C with the lid on, then for 15min at 230C with the lid off) Happy baking!
