Mongolians use mutton and/or beef brisket as a respectful meal when there is a special occasion. For example, during Tsagaan Sar, the winter solstice holiday and the traditional new year for Mongolians, they put the brisket on the most respectful place of the meal table. The brisket fat is zoogenic, and so is healthy and has no cholesterol. That’s why Mongolians always use brisket fat and sheep tail as food to overcome the harsh, cold winter.
