Jambalaya was written and recorded by the great country singer Hank Williams in 1952. It was recorded at Castle Studios Nashville and it went on to be No1 in most countries, The Carpenters then recorded it and they to had huge success. I was lucky enough to be at The Grande Ole opry Nashville when Hank Williams toped the bill and sung this, great memories.
