Rice paper rolls, also known as Vietnamese spring rolls or summer rolls, are a delicious and refreshing appetizer or light meal. They typically consist of fresh vegetables, herbs, vermicelli noodles, and often shrimp or other protein, all wrapped in translucent rice paper.
Ingredients:
Rice paper sheets (round)
Rice vermicelli noodles
Purple cabbage thinly sliced into strips
Lettuce leaves
Cucumber, julienned
Carrots, julienned
Bell pepper, thinly sliced
Avocado slices (optional but taste so well)
Dipping Sauce
Peanut butter
Soy sauce
Lime juice
Garlic, minced
Sriracha or chili garlic sauce (optional)
Water (to thin as needed)
Instructions:
Prepare Ingredients:
Cook rice vermicelli noodles according to package instructions. Drain and set aside.
Prepare any other vegetables as specified (cucumber, carrots, bell pepper).
Wash and prepare fresh herbs (mint, cilantro, Thai basil).
Prepare Dipping Sauce:
Mix hoisin sauce, peanut butter, soy sauce, lime juice, minced garlic, and sriracha or chili garlic sauce (if using). Adjust quantities to taste and add water to thin the sauce to your desired consistency. Set aside.
Prepare Rice Paper Rolls:
Fill a shallow dish or large bowl with warm water.
Dip one rice paper sheet into the water, ensuring it’s fully submerged for about 10-15 seconds until it becomes soft and pliable.
Carefully remove and lay flat on a clean surface.
Assemble the Rolls:
Place a lettuce leaf on the bottom half of the rice paper.
Add a small amount of rice vermicelli noodles on top of the lettuce.
Arrange cucumber, carrots, bell pepper, bean sprouts (if using), and fresh herbs on top of the noodles.
Roll the Rice Paper:
Fold the sides of the rice paper over the filling.
Starting from the bottom, tightly roll the rice paper up to enclose the filling completely.
Repeat with remaining ingredients.
Serve:
Serve the rice paper rolls whole, or slice them in half diagonally.
Serve with the prepared dipping sauce on the side.
