Kabsa (Arabic: كبسة kabsah) is a family of mixed rice dishes that are served mostly in Jordan and Saudi Arabia — where it is commonly regarded as a national dish in Saudi Arabia. Kabsa, though, is believed to be indigenous to Yemen.
