Keto Lemon Drop Cookies

I promised you guys a sweet one was next! These cookies are a refreshing and light summer treat for when life hands you some lemons. The ingredient list is a bit extensive, but the result is so worth it! - 1 1/2 cup almond flour; - 1/2 cup coconut flour; - 2/3 cup granulated low carb sweetener; - 2 tsp cream of tartar; - 1 tsp baking soda; - 1/2 tsp xanthan gum (this is optional, but helps form the dough better); - 1/2 cup (1 stick) softened butter; - 2 eggs; - 1 tsp lemon extract; - 1/2 fresh squeezed lemon juice; - lemon zest. I really enjoyed these on their own, but you could also top them with a lemon glaze! Just mix together 1/2 cup powdered low carb sweetener, lemon juice, and a little bit of water until you reach your desired consistency. Some sweeteners will have a really strong after taste in glazes like this, so be aware of the kind you’re using and how much. It may be overpowering!
