The Maroons were Africans that broke free from enslavement in Jamaica & took refuge in the mountains, forging self sufficient communities & connecting deeply with the land. The jerk marinated meats were often cooked slowly in underground oven pits to minimize the smoke so that not to give their locations away. It was also a technique used to preserve meat. Jerk is more than just a dish!!
