Ajapsandali Recipe:
Ingredients for 6 people:
- 6 eggplants same size
- 6 bell peppers
- 10 tomatoes
- 1 spicy pepper
- a large bunch of cilantro
- dill
- basil
- a little parsley (optional)
- 2 medium size onions
- 4-8 cloves of garlic
- a juice of half of a lemon
- 1 tablespoon of salt
- 1 teaspoon of sugar
- 1/2 cup of olive oil (or other vegetable oil)
Instructions:
- grill eggplants, bell peppers and tomatoes on a barbecue grill or skewers over the fire for 15-20 minutes until the vegetables become soft and the skin starts to peel
- remove all the skin from all grilled vegetables
- cut the eggplants and bel peppers in cubes, but not too small. Cut the tomatoes on the plate so that the juice does not leak out
- chop the hot pepper very finely
- then chop all the greens (cilantro, dill and basil), onion and garlic
- mix everything together in one bowl
