We used frozen chicken to cook this dish, so don’t worry if you don’t have access to fresh chicken.
We know how much you all enjoy chow mein or Chinese stir fried noodles, so we combined another of our favourite chicken stir fry recipe with stir fried noodles to make these 3 cup chicken chow mein. I’d also call this dish Sesame Oil Chicken Noodles because those are the exact ingredients we used in this recipe. Three cup chicken, known as 三杯鸡 (san bei ji) in Chinese, is a traditional Taiwanese dish. As this is a really versatile recipe, you can also use this three cup chicken recipe concept on mushrooms, squid, fish or tofu as well. Three cup chicken gets its name from the three cups of main ingredients used - sesame oil, Chinese cooking wine and soy sauce. The term cup actually refers to the proportion of the three ingredients, so if you use three tablespoons of sesame oil, use three tablespoons each of Chinese cooking wine and soy sauce. This dish is very simple to prepare. If you like sesame oil chicken and chow mein, you must try it. Happy cooking!

280g boneless chicken leg (cut into cubes)
0.5 teaspoon salt
1 tablespoon light soy sauce
A few dashes of white pepper
Other ingredients

3 tablespoons sesame oil
20g sliced young ginger
4 cloves chopped garlic
450g cooked yellow noodles
3 tablespoons Chinese cooking wine
3 tablespoons premium dark soy sauce
2 tablespoons light soy sauce
20ml water
A small bunch of Thai basil - not ideal to omit but if you really can’t get then skip these
A handful of choy sum or Chinese broccoli (kailan)

Chinese cooking wine
Premium dark soy sauce (we’ve never tried this brand before so you gotta trial and error until you find a good premium dark soy sauce. The one we use has a really nice consistency - it’s not too thick but not too watery. It’s also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)
