Pork Loin is a cut that comes from the back of the pig, running from the shoulder to the rear. Please don’t confuse pork loin with pork tenderloin. Pork loin is thicker, bigger, and has a fat cap on top that melts into the meat when you cook it, giving it a fantastic flavor and juiciness.
In the world of open fire cooking, pork loin is your canvas, and you’re the artist 🤣. You can roast it whole, slice it into chops, or even stuff it with all sorts of goodies before grilling it over the flames. The key to unlocking its delicious potential is not to overcook it.
