Open a sea urchin to serve out of the shell!

This giant uni unfortunately died on the way home but I’ll be using this to show you how to crack open a sea urchin. All you need to do is remove the beak or the mouth with a pair of scissors and start chipping away at the opening. Insert the uni shell between the pair of scissors and lift to remove. Repeat until you’ve removed enough to see the gonads inside. If your uni was alive and fresh enough, you can serve this as is!
