255 g good quality dark chocolate
75 g caster sugar
75 g liquid glucose
75 ml water
ASSEMBLY
125 g fresh raspberries
CONDENSED MILK GLAZE
26 g gold gelatine sheets
195 g water
390 g caster sugar
390 g liquid glucose
260 g condensed milk
390 g good quality white chocolate
red gel colourant, as needed
SLEIGH SIDES
300 g good quality white chocolate
