150 g / 5,29oz - active sourdough starter 350ml / 12,34oz - water (room temperature) 250g / 8,81oz - flour, quality 1 (soft wheat) 250g / 8,81oz - whole wheat flour (soft wheat) 10 g / 0,35oz - of salt In a large bowl, mix water with sourdough starter, mix well, then add the flour and salt. Knead until get a homogeneous dough, about 3-4 minutes (by hand) or 8-10 minutes (with a stand mixer). Cover the dough with a towel, and leave it at room temperature for an hour. After an hour, do a series of stretches and folds. And again leave the dough for 1 hour, after which, repeat the stretching and folding again. Leave the dough at room temperature for another hour, after which, form a loaf, and put it in the refrigerator for 12 or more hours. The next day, preheat the oven to 230C / 446F, together with the pizza stone, or without if you don’t have one (it’s not mandatory!) Take the loaf out of the fridge and put it on a baking paper. Flatten a little with your hands, and cut cubes in the middle of the bread. Put the bread in the preheated oven, and add a source of steam (ice, water in a bowl or steam from the oven if available) Bake the bread for 35-40 minutes, in the top-down mode and 15 minutes in only down mode. In the meantime, prepare the garlic sauce with aromatic herbs. Ingredients for garlic sauce : 5-6 cloves of minced garlic 100 ml of water juice from half a lemon aromatic herbs (dill, parsley, green coriander) salt Mix everything together. Remove the bread from the oven and pour the garlic sauce on top, then put the bread in the oven for another 5 minutes.
