How to mould boiling sugar syrup into rainbow lollipops

Ever wondered how rocks, lollipops, and other candy sweets are made? We visited London store Spun Candy for a masterclass on the process. It all starts with sugar syrup boiled to 155 degrees C. The sugar concentration can be mixed with flavours, colorants, and citric acid. Batches of colour are separated and modelled on a heated surface.
