Paprika 1 - 2 Tbsp. maple syrup ½ tsp salt 1 tsp. Olive oil 1 spaghetti squash, about 3 lbs. 1 ½ cup of broccoli florets, organic 6 large leaves of basil, chopped 2Tbsp. Parmesan cheese, grated Pinch of salt Directions: Preheat oven to 425 degrees F. Poke several holes in the squash with a fork and then place in the microwave on high for 4 to 5 minutes. Let it cool for 5 minutes and then cut the squash in half and then cut each half into 3rds making a total of 4 rings and the two ends. Coat the squash with olive oil using your hands. Place the squash on a parchment paper covered baking sheet and roast in the oven for 45 - 55 min or until golden brown and slightly tender. Take out and let cool. While the squash is roasting, you have time to prep the other ingredients. Cook the bacon and save the grease. Once the bacon is done, chop it into bite-size pieces and set it aside. Grate the cheese and set that aside. To make the garlic sauce, steam the cauliflower until it is fork tender. At the same time, heat up the pan you cooked the bacon in and pour out all but 1 Tbsp. of bacon grease. Add one tsp of olive oil and once the oil is hot, add the onion. Saute the onion for 10 minutes and then place the onion and steamed cauliflower in a blender. Add paprika, salt, milk and the maple syrup and blend until smooth. Steam the broccoli until it is fork tender and set aside. Now it’s time to remove the spaghetti squash from its shell. Use a fork to scrape the squash and separate it. Place the squash into an 8 x 8 baking dish. Layer in the bacon, chopped basil, cheese and about ½ cup of the garlic sauce. Stir to combine and then repeat the layer. Stir well with each layer and mix it until the sauce is coating everything. Then add the broccoli on top and try to nestle it into the squash mixture. Finish with a bit more cheese and then the parmesan cheese. Bake in a 350 degree oven for 20 minutes or until everything is hot and the cheese has melted. Thanks for watching and sharing!
