INGREDIENTS Nonstick cooking spray, for greasing 3 pounds boneless skinless chicken thighs Your favorite BBQ rub 1 (12-count) package Hawaiian sweet or buttery rolls 4 slices marbled Jack cheese 2 tablespoons chopped green onions ½ cup ranch dressing 8 ounces cooked bacon, chopped 4 slices pepper Jack cheese 2 tablespoons melted butter 2 tablespoons ranch seasoning PREPARATION 1. Preheat a grill to medium-high heat, about 325°F (163°C). Grease a large aluminum foil tray with cooking spray. 2. Season the chicken thighs with your favorite BBQ rub. 3. Cook the chicken on the preheated grill until an instant-read thermometer inserted into the center of the thighs reaches 165°F (74°C). 4. Chop the chicken into bite-sized pieces. 5. Use a large serrated knife to slice the rolls in half so you have a top and bottom slab. Arrange the bottom slab in the prepared tray. Top with marbled Jack cheese, chopped chicken, green onions, ranch dressing, bacon, and pepper Jack cheese. 6. Cover with the top slab of rolls and brush with melted butter. Sprinkle with ranch seasoning. 7. Return to the grill for about 15 minutes, or until the cheese melts and the buns are crispy. 8.
