Happy cooking and wishing you a wonderful day! 😊 💖 💬 Let me know in the comments if you enjoy my vegan recipes. ❤️ SUBSCRIBE to see new recipes: 🥣Filling ingredients: 240g | | 1 1/2 cup cooked chickpeas (1 can) 1tsp cumin seeds 1 onion 2 garlic cloves zest of 1 lemon 1tbsp dairy-free parmesan cheese (optional) salt to taste 10g | 3tbsp parsley 🥣 Dough ingredients: 100g |4oz| 2/3 cup plain flour 50g |2oz|1/3 cup chickpea flour 1/2tsp baking powder 90ml | 3oz | 2/5 cup dairy-free milk 1tbsp oil 🧑‍🍳Cooking tips: ❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. ❗Instead of salsa sauce you can have it with dairy-free yoghurt or any of your favourite dip. 🥣 Method: Mash 240g | | 1 1/2 cup cooked chickpeas (1 can) Heat a little oil in a skillet. Add 1tsp cumin seeds, 1 chopped onion and 2 finely chopped garlic cloves. Grate 1 lemon zest and add to the pan. Add the mixture to mashed chickpeas. Add 1tbsp dairy-free parmesan cheese (optional). Season with pinch of salt or to taste. Chop 10g | 3tbsp parsley and add to the mixture. Mix until well combined. Add 100g | 4oz | 2/3 cup plain flour to a mixing bowl. Add 50g | 2oz | 1/3 cup chickpea flour, 1/2tsp baking powder and 90ml | 3oz | 2/5 cup dairy-free milk. ℹ️You can use any dairy-free milk you have and enjoy. Knead the dough. Add 1tbsp oil. Knead lightly for a couple minutes. ℹ️The dough should be a little bit moist. You can help it with a little dusting of flour but be careful not to add too much flour. Cover and let the dough rest for 5 minutes. Roll the dough into a 28cm|11 inch circle and 5mm |0.2 inch thick. Place chickpeas mixture in centre of dough circle. Roll gently into an even circle. Place in a nonstick skillet over medium heat and cook for 5-7 minutes until golden brown. Brush with oil, flip to other side and cook until golden brown. Cut into wedges, serve with salsa, dairy-free yogurt or the dip sauce you enjoy the most.
