This delicious vanilla and tonka beans flavoured cream with caramel made in sous vide bath.
ingredients:
4 eggs
1 cup heavy cream
2 tbs brown sugar
1 vanilla
1/2 tonka bean
pinch of salt
6 - 8 tbs sugar
Directions:
Sepeare the egg yolk and the eggwhite
Beat the egg yolk with the sugar well
Add the heavy cream to the eggyolk and mix well
Melt the brown sugar
Pour the melted cramel into a jar
Pour the egg yolk mixture into the jar
Close tha jar
Put the jars into the sous vide bath (80°C = 176F)
