In a saucepan, bring water to a simmer, add salt and vinegar. Carefully, immerse eggs. Keep simmering (do not cover or eggs will burst). Cook for 9 minutes. Transfer eggs to a bath of ice water to stop cooking. After 10 mins or so, gently crack shell with a spoon and peel. Rince peeled eggs and store in cold water in the refrigerator for up to 4 days.
