My Biggest Regret

It’s been amazing to hear the feedback on the so far, I hope you check it out if you haven’t yet! But we need to talk about this sandwich… For me there were three stars of the show. The first being the bacon jam. Every time I make it I wonder why I don’t make it more. It’s essentially just a bunch of caramelized onions, bacon, and maple syrup cooked down with some vinegar and chili peppers for balance. I find myself eating it by the spoonful when I make extra. Next is the roasted garlic bread. I’m a firm believer that garlic bread should be used more often as something beyond just a side dish, it’s a great way to take sandwich bread to the next level. Lastly is the chimichurri. I used it as a quick marinade for the picanha, and also as a sauce at the end.
