Heart Stopping Queso Fundido with Chorizo (Mexican Cheese Dip) | The Frugal Chef

This Mexican queso fundido dip with chorizo is extremely easy to make and it finger licking good! Queso fundido literally means melted cheese. And that is exactly what we will be doing - melting some cheese. Although I am making it in the oven you can easily make it in the skillet. Simply stir it until all the cheese is melted and serve. You can also make this in the microwave (extreme measure) by stirring the cheese every 30 seconds. I would not use this method unless I had no other choice. Speaking of bubbly, make sure you do not overdo it in the oven because your dip will get hard. Once it is all melted, it is ready. Take it out. 10 to 15 minutes max. If you want to make the Mexican queso fundido dip authentic you can use Oaxaca cheese. I made it with Cheddar and Monterrey Jack. We are going to use Mexican chorizo for this recipe.
